Okay. This stuff is awesome. AWESOME. Every time I got to visit California, Jared and Holly keep surprising me with amazing food. This recipe is based heavily on a salsa that Holly’s father makes. It’s super amazing delicious, and has a fun surprise ingredient that you normally wouldn’t think of in salsa, which gives it that extra flavor that sets it above the rest. My version was created out of necessity — I couldn’t find the can of tomato base that they use for the salsa, so I made my own.
Anyways, Jared and Holly, thanks for the great recipe, I hope my version lives up to your standards!
Sauce:
6 LARGE (I mean FRIGGIN HUGE) Roma tomatoes. If you can’t get those, about 9 normal sized (PUNY) ones work.
1 Jalepeño
5 cloves Garlic
Spices:
1 1/2 TB. Ground Cumin (Cut down to 1 TB if you’re not a huge fan. I love the stuff)
1 tsp. Salt
1/2 tsp. Pepper
1/2 tsp. Sugar
Fresh Veggies:
3 Celery Stalks
1 Medium to Large Red Onion (based on love/hate for onions)
1 bunch Cilantro
Part One: Awesome Sauce
First, the sauce: Dice the Tomatoes, Jalepeño, Garlic cloves and throw that in a blender. Blend to your desired consistency. I like mine extra blended, cause I like the juice. Throw this in a pot and put on the stove. Mix in the spices.
Now, when you start to heat this, it begins as a pale pinkish red color. You wanna heat this on high while stirring, and when it is about to reach boiling, it will turn a nice deep red. It should be steaming nicely. Go ahead and take it off the heat and let it cool a bit.
Part 2: The veggies!
Okay. We have the celery, cilantro, and red onion left over. Now you need to put all your crazy mad ninja skillz to the test here. Wash everything and get it ready for some serious chopping. I usually cut stems off from the cilantro bunch, and just hand pick the rest of the large stems off. We need everything diced as thin and small as you can get it here.. We don’t want large chunks of anything.
Anyways, after your hard work in slicing and dicing the celery, cilantro and red onion, Mix it into that (now cooled) sauce we made earlier. Eat this with chips, on tacos, you name it. It’s amazing. This is another fine dish to make friends with, and besides washing a cutting board, blender, and pot, there’s not a whole lot of cleaning to do.
